Remove the stems from 100 grams of green beans, add a pinch of salt (not included in the ingredient list) to plenty of boiling water, and boil for about 2 minutes. Drain the water with a strainer, let them cool slightly, and cut into 5 cm pieces.
Cut 100 grams of pork into bite-sized pieces. Add 2 tablespoons of cooking sake to boiling water, then add the pork. After 10 seconds, turn off the heat and let it cook through with residual heat. Once cooked, cool the pork in ice water and drain the excess water.
Place the green beans (from step 1) and pork (from step 2) in a bowl, and add 2 mashed pickled plums (umeboshi), 2 tablespoons of mayonnaise, 1 tablespoon each of white sesame seeds and ground sesame seeds, 2-3 drops of soy sauce, and 5 grams of dried bonito flakes. Mix everything well.
Chill well in the refrigerator until ready to serve, and it's done!
